Ingredients

1 lb bulk Italian sausage
1 lb shrimp , peeled and de-veined
2 tablespoons olive oil
1 quart chicken stock
1 can diced tomatoes
1 onion , chopped
2 stalks celery , with leaves chopped
4 red potatoes , diced
1 bay leaf
1 head garlic , chopped
1 teaspoon kosher salt
1 teaspoon pepper
1 cup Baby Spinach , roughly chopped
1/4 cup Italian parsley
1 dash of crushed red pepper
grated parmesan cheese ( optional )

Instructions

1.In a large pot, heat the olive oil over medium heat and add the sausage. Cook, breaking up the sausage with a spatula as it browns.
2.Add the onion, celery, garlic and potatoes to the pot and cook them for about 5 minutes, stirring occasionally.
3.Pour in the chicken stock and bring the soup to a boil, then reduce the heat to low and let it simmer for 15 minutes.
4.Add the diced tomatoes and bay leaf, and let the soup cook for another 10 minutes.
5.Stir in the shrimp, spinach, parsley, salt, pepper and crushed red pepper, and let soup cook for another 5-7 minutes until shrimp turn pink and curls.
6.Discard bay leaf and serve hot with a sprinkle of grated parmesan cheese.
