Ingredients

1/4 teaspoon crushed red pepper flakes
1 1/2 lbs tomatoes
sugar
1 loaf French bread

1 red onion
6 sprigs Italian parsley
2 sprigs thyme
1 cup white wine
1 tablespoon chopped parsley
1 tablespoon thyme leaves
Italian Clams in Tomato and Herb Sauce is a classic Italian dish that originated in Naples. Instructions

1.Wash and scrub the clams under cold water, discarding any that are open or cracked.
2.Heat 3 tablespoons of olive oil in a large skillet over medium-low heat.
3.Add the garlic and red pepper flakes, stirring until the garlic is fragrant but not browned.
4.Add the tomatoes, crushing them with a spoon or fork.
5.Cook the tomatoes over low heat until they are thick and jam-like, stirring occasionally, about 30-45 minutes.
6.Meanwhile, preheat the broiler and slice the French bread into 1/2 inch slices.
7.Brush the bread with 3 tablespoons of olive oil and broil until golden brown on both sides.
8.Add the clams, onion, parsley sprigs, and thyme to the skillet with the tomato sauce.
9.Increase the heat to high and add the white wine, stirring to combine.
10.Cover the skillet and cook until the clams have opened, about 5-7 minutes.
11.Discard any clams that do not open.
12.Sprinkle with chopped parsley and thyme leaves before serving with the toasted bread.
