2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon salt
1 teaspoon basil , dried
1 tablespoon oil , basting
4 cod fish fillets ( I used Pacific cod )

Instructions

1.Preheat oven to 375 degrees F.
2.In a small/medium mixing bowl, combine the tomatoes, onions, garlic, capers, olive oil, balsamic vinegar, salt, and dried basil.
3.Mix ingredients well and set aside.
4.Pat fish fillets dry with a paper towel.
5.Place fish fillets on a foil-lined baking sheet.
6.Brush each cod fillet generously with oil.
7.Spoon a good amount of the bruschetta mixture over each fillet, spreading it evenly.
8.Bake in preheated oven for 20-25 minutes or until fish is cooked through and flakes easily with a fork.
