3 lbs Italian sausage , I use garlic & cheese sausage
5 lbs spareribs , country style with bone
8 cans crushed tomatoes , I only use Pastene
1 can tomato paste
1 cup Burgundy wine
10 garlic cloves , minced
1/4 cup dried basil
1 tablespoon fennel seed
2 bay leaves
olive oil

Instructions

1.In a large pot, heat olive oil on medium-high heat. Add garlic and cook for a minute or until fragrant.
2.Add the sausage to the pot and begin to break it up with a wooden spoon.
3.Once the sausage has browned, add in the spareribs and sauté for another 5 minutes.
4.Pour in the crushed tomatoes and tomato paste, and stir until well combined.
5.Add in the Burgundy wine, basil, fennel seed, and bay leaves.
6.Bring the sauce to a boil and then reduce the heat to low. Let the sauce simmer for at least 2 hours, stirring occasionally.
7.Remove the spareribs and any bones before serving over your favourite pasta.
