The Chewy Italian Rolls from King Arthur Flour are traditional Italian bread rolls that are crispy on the outside and soft on the inside. The recipe requires just a few simple ingredients, allowing the flavor of the bread to shine through. These rolls are versatile and can be enjoyed with a variety of toppings, such as herbs, cheese, or meats. They can be used as burger buns or made into garlic bread for a delicious side dish.

Instructions

1.In a large bowl, stir together the 1 1/2 cups unbleached all-purpose flour and 1/4 cup white whole wheat flour. Add the water and instant yeast and stir until all the flour is moistened. Cover the bowl and let rest at room temperature for at least 8 hours or overnight.
2.To the bowl, add the 2 1/2 cups unbleached all-purpose flour, 1/2 cup water, salt, and instant yeast. Stir until the dough comes together. Knead the dough for 7-10 minutes, adding more flour or water as needed, until it is smooth and elastic.
3.Transfer the dough to a lightly greased bowl, cover the bowl, and let the dough rise until it is nearly doubled in size, about 1 to 2 hours.
4.Turn the dough out onto a lightly floured surface and divide it into 12 pieces. Shape each piece into a round ball and place them onto a baking sheet lined with parchment paper. Cover the baking sheet and let the rolls rise for an additional 2 hours.
5.Preheat the oven to 425°F (218°C). Slash the tops of the rolls 2-3 times using a sharp knife. Place the baking sheet in the oven and bake the rolls for 18-20 minutes or until golden brown. Cool the rolls completely before serving.
