Instructions

.In a large bowl, dissolve sugar and yeast in warm water and let sit for 5 minutes until frothy.
.Add all-purpose flour, cake flour, salt, and olive oil to the yeast mixture. Stir until a rough dough forms.
.Turn out the dough onto a floured surface and knead for 10 minutes until smooth and elastic. Transfer the dough to an oiled bowl, cover with plastic wrap, and let rest for 1-2 hours.
.Meanwhile, preheat your oven to 375°F. Line a baking sheet with parchment paper.
.In a large baking dish, toss roma tomatoes, onion, garlic cloves, kosher salt, red pepper flakes, sugar, and olive oil until evenly coated. Roast for 45-60 minutes or until caramelized.
.Transfer the roasted tomato mixture to a blender or food processor and blend until smooth. Add fresh basil and pulse a few times to incorporate.
.Once the dough has rested, turn it out onto a floured counter and divide into 6 pieces for individual pizzas or leave whole for a large pizza.
.Heat your grill to high heat and brush with olive oil. Roll out the pizza dough until it reaches desired thickness and size. Brush the top with olive oil and place onto the grill.
.Grill for 2-3 minutes or until lightly charred. Flip the pizza crust and repeat on the other side.
.Spread the oven-roasted tomato sauce onto the grilled pizza crust. Add desired toppings like fresh mozzarella cheese, sliced pepperoni, spinach, Parmesan cheese, red pepper flakes, and fontina cheese.
.Return the pizza to the grill and close the lid. Grill until the cheese is melted and bubbly. Slice and serve immediately.
