Ingredients

6 chicken breasts
8 ounces spinach , chopped
8 sun-dried tomatoes , sliced
6 large fresh basil leaves , fresh and large sliced
8 ounces mixed mushrooms , sliced ( NOT CANNED ! )
1 red pepper , chopped
1 onion , chopped
4 -6 garlic cloves , chopped
3 tablespoons olive oil
salt and pepper ( to taste )
1 tablespoon olive oil , for greasing pan
1/4 - 1/2 cup dry white wine

Instructions

1.Preheat your oven to 375°F.

4.Add the mushrooms and red pepper to the skillet, and continue cooking for another 5-7 minutes until the vegetables are tender.
5.Add the sun-dried tomatoes, spinach, and basil to the skillet. Season with salt and pepper to taste.
6.Cook the stuffing mixture for an additional 2-3 minutes until the spinach has wilted.
7.Take the skillet off the heat and let the stuffing mixture cool slightly.
8.Lay each chicken breast flat on a cutting board. Using a sharp knife, cut a pocket into each breast, being careful not to cut through to the other side.
9.Stuff each chicken breast with the vegetable mixture and secure the edges with toothpicks.
10.Grease a baking dish with 1 tablespoon of olive oil.
11.Place the stuffed chicken breasts in the baking dish.
12.Pour 1/4 - 1/2 cup of dry white wine over the chicken breasts.
13.Roast the chicken in the oven for 30-35 minutes until cooked through and the juices run clear.
14.Remove the toothpicks and serve hot.
