Ingredients

2 lbs russet potatoes , scrubbed clean
9 ounces finely grated aged gouda cheese ( such as Winchester Sharp )
3/4 cup heavy cream
1 egg , lightly beaten
1 teaspoon salt
1 -2 cup all-purpose flour
1 1/2 tablespoons butter , melted
1 teaspoon fresh ground black pepper
2 tablespoons finely chopped flat leaf parsley
Molten Cheese Gnocchi is an Italian-inspired dish that takes the classic potato gnocchi and amps it up with the addition of cheese. Instructions

1.Preheat oven to 400°F.
2.Prick potatoes all over with a fork and bake them in middle of oven until tender, about 1 hour.
3.Carefully remove hot potatoes from the oven and cut them in half.
4.Using a spoon, scoop out the flesh into a ricer or fine sieve placed over a large bowl.
5.Press the potato through the ricer or sieve into bowl.
6.Add grated cheese, heavy cream, egg, salt, and black pepper to the bowl.
7.Stir gently until a smooth dough forms.
8.Knead in enough flour (start with 1 cup) to form a soft dough.
9.Divide dough into 8 portions and roll each into a rope.
10.Cut ropes into 1-inch sections.
11.Bring a large pot of salted water to a boil.
12.Add gnocchi in batches and cook until they float to the surface, about 3 to 4 minutes.
13.Drain gnocchi and transfer to a serving dish.
14.Drizzle melted butter over gnocchi, sprinkle chopped parsley on top, and serve hot.
