Ingredients

6 large yellow bell peppers
1 tablespoon olive oil
4 cups onions , chopped
1 cup carrot , peeled and chopped
1/2 cup celery , diced
4 cups water
3 cups potatoes , peeled and finely chopped
1 teaspoon salt
2 bay leaves
salt and pepper
fresh , grated parmesan cheese

Instructions

1.Preheat broiler on high.
2.Halve the peppers and remove stems, seeds and membranes.
3.Place peppers skin side up on a baking sheet and broil until skins are blackened and blistered, about 10-15 minutes.
4.Remove from oven and cover in foil. Let steam for 10 minutes.
5.Meanwhile, heat olive oil on medium heat in a large pot.
6.Add onions, carrot and celery and cook until softened, about 10-12 minutes.
7.Add water, potatoes, salt and bay leaves.
8.Bring mixture to a boil and then reduce heat and simmer for 25-30 minutes.
9.Discard bay leaves and let mixture cool slightly.
10.Take the peppers out and remove the blackened skin.
11.Add the roasted peppers and the onion mixture into a blender and blend until smooth.
12.Return the soup to the pot, season with salt and pepper and reheat.
13.Garnish each serving with parmesan cheese.
