Ingredients

1 1/4 ounces active dry yeast
1/4 cup warm water
1 tablespoon sugar
2 cups all-purpose flour

2 eggs
2 tablespoons water
1 cup eggplant , pared into 3/8-inch cubes
1/2 cup zucchini , thinly sliced
1/4 cup green pepper , chopped
1/2 small onion , sliced
1/2 cup tomatoes , coarsely chopped
1/2 teaspoon italian seasoning
2 cups mozzarella cheese , shredded
1/2 lb mild Italian sausage , cooked and drained
1 tablespoon butter , melted
Sausage and vegetable-filled loaf is a savory breakfast dish made with a soft and fluffy dough filled with a mixture of cooked sausage and vegetables. Instructions

1.Dissolve yeast in warm water in a large bowl. Sprinkle sugar over the top and let stand for 5 minutes or until the surface becomes foamy.
2.Add flour, salt, margarine, and eggs and stir until the dough forms.
3.Turn the dough onto a floured surface and knead until smooth and elastic.
4.Place the dough in a greased bowl and cover to let rise in a warm place for around 40 minutes.
5.Saute eggplant, zucchini, green pepper, and onions in a large skillet. Add tomatoes and italian seasoning and cook until the vegetables are soft. Set aside mixture to cool.
6.Preheat oven to 375°F. Roll out dough into a rectangular shape and sprinkle mozzarella cheese on top.
7.Spread the sausage mixture evenly onto the dough, then roll the dough, starting with the edge closest to you, into a loaf shape.
8.Place the loaf seam-side down onto a greased baking sheet, then brush with melted butter.
9.Bake for 30-35 minutes or until the top is golden brown.
