Instructions

1.In a large pot, place the lettuce and chicken breasts, along with onion, celery, carrot, parsley, salt, thyme, bay leaf, chicken broth, and water. Bring to a boil over high heat, then reduce the heat to low and simmer for 25-30 minutes or until chicken is cooked.
2.Remove chicken breasts from the pot and cool. Strain the broth and reserve for later use.

4.Slice the cooled chicken breasts into thin servings.
