Ingredients

2 tablespoons extra virgin olive oil , plus more for drizzling
1/2 cup sliced onion
1 teaspoon minced garlic
2 yellow squash ( small and sliced 1/4 inch thick )
1 teaspoon chopped fresh marjoram or 1/4 teaspoon dried marjoram
salt & freshly ground black pepper
6 eggs
3/4 cup ricotta cheese
1/4 cup grated parmesan cheese
2 roma tomatoes , peeled , seeded and chopped

Instructions

1.Preheat the oven to 350F.
