Ingredients

2 cups butternut squash , peeled and cubed
1 large red bell pepper , cut into 1-inch pieces
1 large onion , sliced into rings
1 tablespoon olive oil

4 ounces goat cheese
1/4 cup Italian seasoned breadcrumbs
1/2 lb fettuccine
1/4 teaspoon crushed red pepper flakes

Instructions

1.Preheat oven to 375°F.
2.In a large mixing bowl, combine the cubed butternut squash, red bell pepper and onion rings with olive oil, salt, dried rosemary and black pepper. Mix well.
3.Spread the mixture in a baking dish and bake for 25 minutes.
4.Cut the goat cheese into slices and sprinkle Italian seasoned breadcrumbs on top.

6.Cook fettuccine according to package instructions.
