Ingredients

4 large bell peppers ( may mix colors )
16 ounces white button mushrooms , chopped small
3 -4 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon black pepper
3 tablespoons chopped fresh mixed Italian herbs ( may use basil or oregano , etc . )
8 ounces ricotta cheese
2 teaspoons Dijon mustard
3/4 3/4 cup parmesan cheese or 3/4 cup asiago cheese
wooden toothpick ( as needed )

Instructions

1.Preheat the oven to 375°F.
2.Cut the tops off the bell peppers and remove the seeds and ribs from inside.
3.In a skillet, heat the olive oil over medium-high heat. Add the mushrooms and cook for 6-8 minutes, until all the moisture has evaporated and the mushrooms have browned. Remove from heat.
4.Season the mushrooms with salt, pepper, and Italian herbs.
5.In a mixing bowl, mix together the ricotta cheese, Dijon mustard, and parmesan cheese. Add the cooked mushrooms.
6.Stuff each bell pepper with the mixture. Roll up the top part of the pepper twice and secure it with a wooden toothpick.
7.Place the stuffed peppers into a baking dish and bake for 45-50 minutes.
