Instructions

1.In a large bowl, mix together the grated onion, chopped parsley, egg, minced garlic, salt, breadcrumbs, and grated parmesan cheese.

4.In a large pot, bring the chicken broth to a boil.
5.Add the meatballs to the broth one at a time, and cook for 5-6 minutes.
6.Add the defrosted spinach to the pot, and stir.
7.In a small bowl, whisk together the 2 eggs and 2 tablespoons of grated parmesan cheese, and add to the soup.
8.Cook for an additional 3-4 minutes, until egg is cooked through.
9.Season with salt and pepper to taste, and garnish with extra grated parmesan cheese.
