Ingredients

1/2 lb ripe plum tomato , peeled and chopped

2 tablespoons grated parmesan cheese

Instructions

1.In a medium saucepan, cook chopped tomatoes, marsala wine/chicken broth and white grape juice, oregano, basil, salt and pepper for 10-12 minutes over medium heat, stirring occasionally. Set aside once done.
2.Cook fettuccine according to the package instructions, in a separate pot.
3.While the pasta cooks, heat olive oil in a separate pan over medium heat and add mushrooms and onion. Cook for 3-4 minutes until vegetables have softened and turned slightly brown. Add in minced garlic and cook for an additional minute.
4.To the tomato sauce, add cream cheese and parmesan cheese and continue to cook over medium heat until well combined and heated through.
5.Once fettuccine is done, strain it and add to the mushroom and onion mixture. Toss in tomato cream sauce and stir well to combine. Serve hot.
