about 1 1/2 quarts water
salt
1 teaspoon white wine vinegar
2 eggs , room temperature
2 slices country-style bread , each 1/2-inch thick
2 thin slices prosciutto
freshly ground black pepper
2 cups coarsely chopped fresh basil
1 cup olive oil

Instructions

1.In a large pot, bring the water and salt to a boil. Add the vinegar.
2.Crack each egg into a small bowl or ramekin, and then slip it into the water. Cook until the whites are set but the yolks are still runny, about 2 1/2 minutes. Remove with a slotted spoon and drain on paper towels.
3.Preheat a grill pan or a toaster oven.
4.Toast the bread slices.
5.Place 1 slice of toast on each plate and drape a slice of prosciutto over each. Top each with a poached egg and season liberally with pepper. Scatter the chopped basil over the top, then trickle olive oil over the basil. Serve immediately.
