1 head garlic , top sliced off
1 cup olive oil
1/2 cup unsalted butter
1/4 teaspoon kosher salt
1/2 teaspoon cracked black pepper
1/4 cup chopped flat leaf parsley , stems too

Instructions

1.Preheat the oven to 375F.
2.In a medium casserole dish, combine anchovies, garlic, olive oil, butter, salt, and black pepper.
3.Roast in the preheated oven until the garlic is golden brown and the anchovies are dissolved, around 30 minutes.
4.Drain the garlic and anchovies and reserve the oil.
5.In a bowl, mix the garlic and anchovies with the parsley and 2 tablespoons of the reserved oil until the ingredients are combined well.
6.Drizzle remaining reserved oil over the top of the mixture.
