Ingredients

400 g rough puff pastry
1 beaten egg
50 g plain flour
6 lamb shanks
2 tablespoons olive oil
4 red onions , quartered
8 garlic cloves , peeled and smashed
750 ml of full bodied red wine
300 ml beef stock
2 tablespoons finely chopped rosemary
3 tablespoons red currant jelly
maldon salt
cracked black pepper

Instructions

1.Preheat oven to 190°C.
2.Mix together beaten egg and milk in a small bowl. Set aside.
3.Season flour with salt and pepper, and then use it to coat the lamb shanks in a shallow bowl.
4.Heat olive oil in a large Dutch oven over medium-high heat. Add lamb shanks in batches and cook until browned. Remove from Dutch oven and set aside.
5.Add onions and garlic to the Dutch oven and cook until onions are softened.
6.Add red wine, beef stock, chopped rosemary and red currant jelly to the Dutch oven and bring to a boil.
7.Reduce heat to low and add lamb shanks back to the Dutch oven, then cover and bake for 2 hours.
8.Remove and cool the lamb shanks. Shred the meat and set aside.
9.Roll out the rough puff pastry, then cut to sizes suitable for your baking dishes. Make sure to make extra pastry to cover the top.
10.Bake the pastry for 15 minutes in the preheated oven and brush with egg wash mixture.
11.Transfer the lamb shanks to your baking dishes and cover with the remaining pastry. Brush with egg wash.
12.Bake for another 15-20 minutes or until the pastry is golden-brown.
