Ingredients

3 lbs chicken pieces
3 sprigs fresh rosemary
1 large orange ( or two medium oranges )
1 large onion ( vidalia is a good choice )
1 1/2 tablespoons olive oil
1/4 cup dry white wine
salt
black pepper , fresh ground
Paula's Orange-Rosemary Chicken is a delightful dish that incorporates a mix of savory and zesty flavors. The chicken is seared and then baked in a flavorful sauce that's made with fresh rosemary, orange slices, white wine, and chicken stock. Instructions

1.Preheat oven to 375 F (190 C).
2.Sear chicken in olive oil on both sides for about 6 minutes each, until they become golden brown. Remove from the pan and set aside.
3.Add diced onions and cook until they get translucent.
4.Deglaze the pan with white wine scraping brown bits with a wooden spoon. Add chopped rosemary, orange slices and chicken stock to the pan. Bring it to a simmer.
5.Return chicken to the pan with the onions and orange slices under and around the chicken. Cover with orange zest and season with salt and pepper.
6.Bake in the oven for 40-50 minutes. Check if the chicken is cooked through and juices run clear. Let stand for a few minutes before serving.
