Instructions

1.Preheat the oven to 375°F (190°C).
2.In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, about 5 minutes.
3.Add the diced carrot, celery, onion, garlic, and salt and cook for an additional 5 minutes.
4.Stir in the tomato sauce, tomato paste, honey, and chicken broth. Simmer for 5 minutes.
5.In a separate bowl, mix together the grated Pecorino Romano and Asiago cheeses.
6.Spread 1/3 of the meat sauce onto the bottom of a 9x13 inch baking dish. Cover with 3 uncooked lasagna noodles, followed by 1/3 of the cheese mixture. Repeat layers two more times.
7.Top with chopped olives and cover tightly with aluminum foil.
8.Bake for 45 minutes, then remove the foil and continue baking for an additional 15 minutes until hot and bubbly. Let the lasagna cool for 10 minutes before slicing and serving.
