Ingredients

3 medium eggplants
1 cup breadcrumbs
1 cup flour
1 egg

Instructions

1.Preheat oven to 400°F.
2.Cut eggplants into 1/2 inch rounds.
3.Mix breadcrumbs, flour, and salt in a bowl.
4.Beat egg in another bowl.
5.Dip eggplant slices into egg, then coat with breadcrumb mixture.
6.Heat olive oil in a large skillet and fry coated eggplant slices for 2 minutes on each side.

8.Arrange half the eggplant slices in a baking dish topped with half of the tomato sauce, 1/2 cup mozzarella, 1/4 cup parmesan cheese. Repeat with remaining ingredients.
9.Drizzle with olive oil and bake for 20-25 minutes or until the cheese is melted and bubbly.
10.Garnish with oregano leaves.
