1 lb pappardelle pasta
1/4 teaspoon saffron
3 tablespoons butter
1 medium onion
1 cup peas ( fresh shelled garden peas )
1 teaspoon orange zest , fresh
1/4 cup orange juice , fresh
salt
parmesan cheese , freshly grated
Pappardelle With Peas and Asparagus in Orange-saffron Sauce is a classic Italian-style pasta dish. Instructions

1.Clean the asparagus and cut off the woody ends. Cut into 1 inch pieces.
2.Cook pasta in boiling salted water for 6-8 minutes. Drain and keep warm.
3.In a small bowl mix the saffron with 2 tablespoons of hot water and set aside.
4.Chop onion and cook in the butter until translucent. Add the asparagus and cook for a few minutes more.
5.Stir in the peas, orange zest, and juice. Cook for a further 3 minutes.
6.Add the saffron water and season with salt.
7.Combine the pasta and asparagus sauce in a large bowl. Serve with freshly grated parmesan cheese on top.
