Ingredients

1 package active dry yeast
1/4 teaspoon unbleached cane sugar
1 1/4 cups water
3 1/2 cups unbleached flour or 3 1/2 cups bread flour
1/2 teaspoon salt
4 tablespoons olive oil , divided
to taste mixed herbs ( oregano , basil , garlic powder , sage , marjoram and rosemary )
to taste red pepper flakes , crushed

Instructions

1.In a large mixing bowl, dissolve yeast and sugar in warm water.

8.Turn the dough out onto the sheet and press it out into a rough rectangle.
9.Cover the dough with a clean kitchen towel and let it rise for 30 minutes in a warm place.
10.Preheat the oven to 450°F.
11.Use your fingers to make dimples all over the dough and sprinkle with mixed herbs, red pepper flakes, salt and pepper.
12.Drizzle 1 tbsp olive oil over the top.
13.Bake for 15-20 minutes or until golden brown.
