1/3 cup onion , minced
1 garlic clove , minced
6 anchovy fillets ( flat )
1 1/2 cups arborio rice
3 anchovy fillets ( flat , minced )
1 tablespoon unsalted butter
1/4 cup parmesan cheese , grated ( use best quality possible )
2 tablespoons fresh parsley , chopped

Instructions

1.In a pot, heat the fish stock and white wine together.
2.In a large skillet, melt the butter and oil over medium heat.

4.Add the anchovy fillets to the skillet and cook until they break down and become a paste.
5.Add the arborio rice to the skillet and stir until coated in the anchovy paste.
6.Add a ladle of the hot fish stock to the skillet and stir until almost all the liquid is absorbed.
7.Continue adding ladles of hot stock to the skillet and stir until each ladle is almost absorbed before adding the next.
8.Once the rice is cooked and creamy but still slightly al dente, stir in the minced anchovy fillets, unsalted butter, parmesan cheese, and fresh parsley.
9.Serve hot and enjoy!
