1 tablespoon light brown sugar
10 ounces fresh spinach , rinsed , cut in large pieces
1/4 cup parmesan cheese , grated
1/4 cup fontinella cheese , grated

Instructions

1.Turn on the pressure cooker to sauté mode and heat olive oil in it. Add leeks and garlic in the pot, and sauté until they are slightly brown
2.Stir in arborio rice, potatoes, parsley, celery, bay leaf, salt, pepper, dried basil, lemon juice, tomato paste, and light brown sugar. Mix well.
3.Add chicken stock and stir well. Close the lid and set the pressure cooker to high pressure mode. Cook for 12-15 minutes and let it release the pressure naturally.
4.Open the lid and stir the soup. Add spinach and parmesan and fontina cheese. Cook on a sauté mode for 5-8 minutes
5.Serve hot sprinkled with more cheese
