Ingredients

1 lb boneless skinless chicken breast half , pounded to uniform 1/4-in . thickness
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
4 thin slices provolone cheese ( or fresh mozzarella-3 ounces )
4 paper thin slices prosciutto
1 small lemon
8 small sage leaves , plus 2 tbsp . thinly sliced leaves
2 tablespoons olive oil
1/2 cup dry white wine ( or chicken broth ) or 1/2 cup vermouth ( or chicken broth )
1 small garlic clove , finely chopped
2 -3 tablespoons unsalted butter , very soft
Chicken cutlets Saltimbocca is a classic Italian dish made with thin chicken cutlets filled with savory ingredients like prosciutto and cheese. Instructions

1.Preheat the oven to 400°F.
2.In a shallow dish, combine the flour, salt, and pepper.
3.Dredge the chicken cutlets in the flour mixture, shaking off the excess.
4.Lay 1 slice of cheese on each piece of chicken and top with a slice of prosciutto, cutting the prosciutto to fit if necessary.
5.Lay 2 sage leaves on top of the prosciutto and squeeze a few drops of lemon juice over the sage leaves.
6.Roll up each cutlet and secure with a toothpick.
7.In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken cutlets and cook until browned on both sides, about 3-4 minutes per side.
8.Transfer the skillet to the oven and bake the chicken cutlets until they are cooked through and the cheese is melted, about 10-12 minutes.
9.Meanwhile, in a small saucepan, combine the white wine, garlic, and thinly sliced sage leaves. Bring the mixture to a boil and simmer for 5 minutes, or until the liquid has reduced by about half.
10.Remove the saucepan from the heat and whisk in the softened butter until the sauce is smooth and creamy.
11.To serve, drizzle the sage butter pan sauce over the chicken cutlets.
