1/8 cup sugar

16 ounces cream cheese , room temperature
1 cup sugar
16 ounces mascarpone cheese
4 eggs
1 tablespoon lemon zest or 1 tablespoon orange zest
1 tablespoon fresh lemon juice or 1 tablespoon orange juice
2 teaspoons vanilla extract
1 pinch salt
1/4 cup honey , for drizzling
sprinkling of honey-roasted pistachios
1 sprig mint

Instructions

1.Preheat oven to 325°F.
2.To make the crust, stir together biscotti crumbs, sugar, and melted butter in a bowl until moistened.
3.Press mixture onto the bottom and up the sides of a 9-inch springform pan.
4.Bake for 10 minutes or until lightly browned.
5.Cool on a wire rack.
6.To make the honeyed pistachios, heat honey, sugar, and salt in a small skillet over medium heat until sugar dissolves.
7.Add pistachios and cook, stirring constantly until lightly browned and glazed.
8.Remove from heat and cool on parchment paper.
