1 cup heavy cream , chilled ( plus sugar to taste )

Instructions

1.Begin by making the batter. In a large mixing bowl, whisk together the eggs, rum, vanilla extract, sugar, and salt until well combined.

4.Add the lemon zest to the batter and stir until evenly distributed.

9.Fold the crêpe in half and then in half again to form a triangle.
10.Repeat with the remaining crêpes and toppings.
11.Serve each crêpe with a dollop of fresh whipped cream on top, if desired.
