Ingredients

3 cups whole milk
1 cup half-and-half cream
1 vanilla bean
6 large egg yolks
1 cup granulated sugar
2 cups mascarpone cheese
1 tablespoon espresso , instant granules
1/4 cup coffee liqueur
1/3 cup bittersweet dark chocolate ( shaved ) or 1/3 cup semisweet chocolate ( shaved )
5 crumbled lady finger cookies

Instructions

1.In a medium saucepan, heat milk and half-and-half cream over medium heat until it begins to steam.
2.Split the vanilla bean lengthwise with a sharp knife. Scrape the seeds out of the vanilla pod and add to the milk mixture. Add the pod too, letting it steep for 10 minutes. Discard the pod.
3.In a medium bowl, whisk egg yolks and sugar together until the mixture is pale and thick. Whisk in a cup of the hot milk mixture, one spoonful at a time, to temper the eggs.
4.Whisk the egg mixture back into the saucepan with the rest of the milk and cook over low heat, stirring constantly, until the custard thickens. This should take about 10 minutes. Do NOT let it boil.
5.Remove the custard from the heat, let it cool for a few minutes.
6.In a large bowl, whisk together mascarpone, instant espresso, and coffee liqueur until smooth.
7.Whisk the cooled custard into the mascarpone mixture.
8.Using an ice cream machine, churn the mixture according to the manufacturer's instructions. Fold in shaved chocolate and crumbled ladyfingers during the last 5 minutes of churning.
9.Transfer the mixture into a freezer-safe container and freeze for at least 3 hours before serving.
