Ingredients

1 cup hazelnuts
1/2 cup sugar
2 cups all-purpose flour
1 cup butter ( softened )
1/4 cup sugar ( extra sugar for shaping cookies )
Mezzalunas are a type of Italian cookie named for their crescent moon shape. These particular mezzaluna cookies are infused with roasted hazelnuts to give them a unique and delicious flavor. They are easy to make and perfect for serving at any occasion.

Instructions

1.Preheat oven to 350 degrees F.
2.Spread hazelnuts on a baking sheet and roast in the preheated oven for about 10 minutes. Transfer the roasted nuts to a bowl and allow to cool.
3.Grind cooled nuts in a food processor with 1/2 cup of sugar until they resemble sand.
4.In another bowl, mix together flour and nut-sugar mixture.
5.Using your fingers, mix in softened butter until the dough comes together and can be shaped into a ball.
6.Divide the dough in half, and shape each half into a log about 1 1/2 inches in diameter. Roll each log in extra sugar until completely coated.
7.Using a sharp knife, cut each log into 1/2-inch-thick slices on a diagonal. Arrange the cookies on a baking sheet lined with parchment paper.
8.Bake the cookies for 10-12 minutes or until lightly golden. Allow to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
