Ingredients

1 sheet ready rolled shortcrust pastry
2/3 cup water
2 tablespoons caster sugar
2 teaspoons instant coffee
1/3 cup liqueur , of choice
4 egg yolks
1/3 cup caster sugar
250 g mascarpone cheese , softened
300 ml cream
1 packet ladyfingers ( sponge fingers )
cocoa , for dusting

Instructions

5.In a large bowl, beat the egg yolks with the remaining caster sugar until pale and thick. Add the mascarpone and beat until smooth.
6.In a separate bowl, whisk the cream until soft peaks form. Fold the cream into the mascarpone mixture.
7.Dipping each ladyfinger briefly in the coffee and liqueur mixture, layer them over the cooled pastry in the tin.
8.Pour half the mascarpone mixture over the ladyfingers and repeat with another layer.
9.Sift cocoa over the top to cover and refrigerate for at least 4 hours before slicing and serving.
