Ingredients

1 cup plain flour
90 g butter , chopped
1/4 cup caster sugar
100 g dark chocolate , melted
1 can sweetened condensed milk
30 g butter , chopped
2 tablespoons golden syrup

Instructions

1.Preheat oven to 180°C (160°C fan-forced). Grease a 12-hole 1/3 cup capacity muffin pan.
2.Sift flour into a medium bowl. Rub in butter until mixture resembles fine breadcrumbs. Stir in sugar. Add 1 egg yolk and 1 1/2 tablespoons cold water. Stir with a flat-bladed knife until dough just comes together. Turn onto a floured surface. Knead gently until smooth. Flatten dough into a disc. Wrap in plastic wrap. Refrigerate for 30 minutes.
3.Place muffin pan on a baking tray. Roll out pastry between 2 sheets of baking paper until 5mm-thick. Using a 9cm round cutter, cut 12 rounds from pastry. Press rounds into pan holes. Prick with a fork. Refrigerate for 10 minutes.
4.Bake for 18 to 20 minutes or until light golden. Cool.
5.Meanwhile, make Caramel filling: Combine chocolate, condensed milk, butter and golden syrup in a medium saucepan over low heat. Cook, stirring constantly, for 10 to 12 minutes or until mixture thickens and comes away from sides of pan.
6.Spoon mixture into pastry cases. Refrigerate for 2 hours or until firm. Serve.
