Instructions

1.In a medium saucepan, combine sugar, water, and basil. Bring to a boil, stirring until sugar has dissolved. Remove from heat and let steep for 10 minutes. Strain syrup into a large bowl.
2.Add orange juice, lemon juice (or lime juice), grapefruit juice, vanilla extract, and kosher salt to the bowl with the syrup. Stir until well combined.
3.Pour mixture through a fine-mesh sieve into a shallow metal baking dish and place it in the freezer.
4.Stir the mixture with a fork every 30 minutes, until granita is slushy and frozen, 2-3 hours. Scrape with a fork to separate ice crystals until fluffy and frozen.
5.Spoon granita into chilled bowls and serve with basil and lemon (or lime) wheel.
