Ingredients

2 large eggs
2 tablespoons instant coffee
1 teaspoon vanilla
2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup butter , softened
3/4 cup granulated sugar
1 cup almonds , sliced ( or chopped )
4 ounces bittersweet chocolate , baking bar chopped ( I have used unsweetened baking chocolate )
Ghirardelli Chocolate Nut Biscotti is a classic Italian cookie that has become a beloved treat around the world. It was originally meant to be a dry cookie, designed to be dipped in coffee or tea, but the recipe has evolved over time. Instructions

1.Preheat oven to 325°F and line a baking sheet with parchment paper.
2.In a small bowl, mix together eggs, instant coffee, and vanilla. Set aside.
3.In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
4.In a large bowl, beat together softened butter and sugar until light and fluffy.
5.Gradually beat in egg mixture until incorporated.
6.Gradually add flour mixture to the wet mixture, beating until just combined.
7.Fold in sliced almonds and chopped chocolate.
8.Divide the dough in half. On the prepared baking sheet, shape dough into two flat logs spaced 2 inches apart and about 1/2 inch thick.
9.Bake for 25-30 minutes, until they are lightly golden brown and slightly springy to the touch.
10.Let the logs cool on the sheet for 5 minutes, then slice the logs diagonally into 1/2 inch slices.
11.Lay the slices cut side up on the baking sheet and bake them again at 325°F for 10-12 minutes or until they are crisp and golden.
12.Once cookie slices are done, let them cool for a few minutes then transfer to a wire rack to cool completely.
