Ingredients

2 1/2 cups strong black coffee , room temperature
1 1/2 tablespoons instant espresso powder or 3 tablespoons instant coffee
9 tablespoons dark rum , divided ( optional )
6 large egg yolks
2/3 cup sugar
1/4 teaspoon table salt
1 1/2 lbs mascarpone cheese
3/4 cup heavy cream ( cold )
14 ounces ladyfingers
3 1/2 tablespoons cocoa , preferably Dutch-processed
1/4 cup semisweet chocolate ( optional ) or 1/4 cup bittersweet chocolate , grated ( optional )

Instructions

1.Stir coffee, espresso powder and 5 tablespoons of rum in a shallow dish or baking tin
2.Mix egg yolks, sugar, and salt in a medium bowl until combined and light in color.
3.Add the remaining 4 tablespoons rum to the egg mixture and beat until combined.
4.Add mascarpone to the egg mixture and beat at medium speed until combined and smooth. Set aside.
5.In a large bowl, beat cream at medium speed, until stiff peaks form
6.Dunk ladyfingers into the coffee mixture, roll and arrange on the bottom of your dish
7.After one layer of ladyfingers, spread one half of the mascarpone mixture over the top.
8.Repeat step 6 with remaining ladyfingers and the other half of the mascarpone mixture
9.Cover and chill in the refrigerator for at least 6 hours or overnight. Before serving, sprinkle cocoa powder on top (and grated chocolate, if desired).
