Instructions

1.In a large mixing bowl, whisk together the flour, baking powder, salt, and confectioner's sugar.
2.In another bowl, combine the egg and rum, then pour into the bowl with the dry ingredients and mix until a smooth dough forms.
3.On a floured surface, roll out the dough as thin as possible, then cut into strips about 5-6 inches long and 1 inch wide.
4.Cut a slit in the middle of each strip, then lift one end and thread it through the slit to create a knot.
5.In a deep frying pan, heat the vegetable oil to 375°F, then fry the cenci in batches until golden brown on both sides, about 1-2 minutes per side.
6.Remove the cenci with a slotted spoon and place them on paper towels to drain excess oil.
7.Once completely cooled, dust the cenci with confectioner's sugar before serving.
