Instructions

1.Preheat oven to 325°F (160°C) and place a large sheet pan on the lowest rack.
2.In a large mixing bowl, beat ricotta cheese, cream cheese, and sugar until light and fluffy, scraping the sides of the bowl as needed.
3.Add eggs one at a time, mixing well after each addition. Stir in vanilla, lemon juice, and cornstarch.
4.Fold in melted butter and sour cream until well combined.
5.Pour mixture into a greased 9-inch springform pan.
6.Place the springform pan in another large pan and pour water into the outer pan to create a water bath.
