Ingredients

2 eggs
1 pinch salt
130 g sugar
150 g flour
50 g fine cocoa
1 teaspoon baking powder
100 g chopped nuts ( hazelnuts or pecans are my favourites )
100 g good quality dark chocolate , chopped
Italian biscotti, or cantuccini, are firm, twice-baked biscuits that are perfect for dipping in tea or coffee. This recipe puts a chocolaty twist on the traditional biscotti recipe by adding cocoa powder and good quality dark chocolate chunks. These treats are great for satisfying your sweet tooth without being overly indulgent. What's more, they are made without butter, which means they are a healthier version of the traditional buttery biscotti. The addition of nuts not only adds a lovely crunch but also boosts the nutrition of this tasty sweet snack.

Instructions

1.Preheat the oven to 160°C (325°F)
2.In a large bowl, whisk eggs and salt together until light and frothy.
3.Gradually add sugar, whisking until well combined.
4.Sift in flour, cocoa, and baking powder and mix until just combined.
5.Fold in chopped nuts and chocolate.
6.Divide the mixture into two logs on a lined baking tray.
7.Flatten out each log slightly, then bake for 30-35 minutes.
8.Remove from the oven and rest on the bench for 5 minutes.
9.Use a serrated knife to slice the logs into 1 cm biscotti.
10.Place the biscuits back on the baking tray, flat side down.
11.Bake for a further 10-15 minutes or until crisp.
12.Serve with a hot cup of coffee or tea.
