12 egg whites

Instructions

1.Preheat the oven to 180 C. Grease a 9x13 inch baking dish.
2.In a large bowl, beat the egg whites until stiff peaks form.
3.In a separate bowl, whisk together the potato starch, cornstarch, sweetener, salt, and cream of tartar.
4.Gently fold in the dry ingredients and vanilla extract into the egg whites until combined.
5.Pour the mixture into the prepared baking dish and bake for 30 minutes or until the top is golden brown.
6.Meanwhile, in a small saucepan, whisk together the soymilk, cornstarch, and sweetener. Cook over medium heat, whisking constantly, until thickened.
7.Remove from heat and let cool completely.
8.Once the egg mixture has cooled, use a fork to poke holes all over the surface and pour the strong black coffee over it.
9.Spread the cooled soymilk mixture over the top of the cake.
10.Chill the tiramisu for at least 4-5 hours or overnight.
11.Dust the top with instant coffee powder before serving.
