Ingredients

2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup butter , softened
3/4 cup sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups post selects cranberry almond crunch cereal
1/2 cup white chocolate chips
2/3 cup semi-sweet chocolate chips , melted
White Chocolate Cranberry Biscotti is a great cookie to serve with coffee or tea. It is easy to prepare and can be stored for a longer period compared to most of the cookies. The combination of sweet white chocolate and tangy cranberry with a crunchy biscuit texture make these biscottis ideal for anyone with a sweet tooth. Plus, they are a perfect choice for breakfast on the run or as a snack for your daily break.

Instructions

1.Preheat oven to 350F.
2.In a medium bowl, stir flour, baking powder and salt together.
3.In another large bowl, beat butter and sugar until creamy.
4.Beat in eggs and vanilla extract.
5.Add the dry ingredient mixture to the butter mixture. Stir in cereal and white chocolate chips.
6.Shape dough into two loaves and place them on the lined baking sheet.
7.Bake for 25 to 30 minutes or until golden brown.
8.Remove from oven and let it cool for 5 minutes.
9.Reduce oven temperature to 325F.
10.Cut loaves crosswise into 1/2 inch slices and place on the baking sheet again.
11.Bake for an additional 12-14 minutes or until lightly toasted, turning once halfway through baking.
12.Melt the semi-sweet chocolate chips in the microwave.
13.Drizzle the melted chocolate over the biscotti and let it cool until the chocolate has hardened.

Not suitable for diabetics.

The dough for the biscotti will be very stiff and a little challenging to shape.
