3/4 cup vegetable oil
1 1/2 cups buttermilk , well-shaken
1 teaspoon vanilla
1 teaspoon almond extract
1/4 cup liqueur ( for drizzling on cake )

1/2 cup orange marmalade , warmed ( raspberry , blackberry perseveres can be used )

Instructions

1.Preheat oven to 300°F. Grease three 9-inch cake pans with oil or cooking spray and line with parchment paper.

3.In a large bowl, whisk together sugar, flour, cocoa powder, baking soda, baking powder, and salt.
4.In another large bowl, beat eggs, vegetable oil, buttermilk, vanilla, and almond extract until well combined.
5.Gradually add flour mixture to egg mixture, mixing until just combined. Stir in coffee mixture.
6.Pour batter into prepared pans and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool cakes completely on wire racks.
7.Meanwhile, make the ganache by melting 1 pound of semisweet chocolate in a heatproof bowl set over a pot of simmering water. Once melted, remove bowl from heat and whisk in heavy cream and sugar until smooth. Whisk in liqueur and butter until smooth.
8.Spread orange marmalade over the top of two cake layers and sprinkle each with toasted almonds. Stack the two layers with marmalade and almonds on top of each other. Top with third cake layer and drizzle with 1/4 cup liqueur. Spread ganache over the entire cake.
9.Chill cake for at least an hour before slicing and serving.
