1/4 cup butter , cold , cut in small pieces
3/4 cup dried tart cherry
3 large eggs , beaten
1 1/4 cups pistachio nuts
Cherry-Pistachio Biscotti is a twice-baked Italian cookie that originated in the city of Prato. The word 'biscotti' means twice-baked, and that is precisely how this delicious treat is made. The dough is first baked in a log shape, then sliced and baked again to give it its distinctive crunchy and nutty texture. Instructions

1.Preheat oven to 350°F.
2.In a mixing bowl, add flour, sugar, lime peel, and baking powder, and mix well.
3.Using your fingertips, rub in the butter until the mixture forms coarse crumbs.
4.Add in dried cherries and pistachios and mix until combined.
5.Beat the eggs in a bowl, then add to the flour mixture and stir until the dough forms.
6.On a floured surface, knead the dough a few times, then shape it into a 14-inch-long log.
7.Place on a parchment-lined baking sheet and bake at 350°F for 25-30 minutes, or until lightly golden. Allow to cool for 10 minutes.
8.Reduce oven temperature to 325°F. Cut the log diagonally into 1/2-inch thick slices with a serrated knife.
9.Place the biscotti on their sides on the parchment-lined sheet and bake at 325°F for 20 minutes, or until crisp and golden brown.
