Ingredients

2 large eggs
175 g sugar
1/4 teaspoon salt
rind 1 orange , only
200 g self raising flour
250 g walnuts , roughly chopped
250 g dates , roughly chopped
2 teaspoons almond extract
80 g dark chocolate , roughly chopped

Instructions

1.Preheat your oven to 350 F.
2.In a mixing bowl, beat the eggs, sugar, salt and orange rind until pale and fluffy.
3.Gently stir in the self-raising flour, dates, walnuts and almond extract until everything is well incorporated.
4.Shape the dough into two logs and flatten them slightly on a baking sheet lined with parchment paper.
5.Bake for 25-30 minutes, or until the logs are golden.
6.Remove from the oven and let cool for 10 minutes. Reduce the oven temperature to 325 F.
7.Cut the logs diagonally into 1cm pieces and arrange them on the baking sheet.
8.Bake for another 8-10 minutes, until the biscotti are golden and dry.
9.Let cool completely before decorating with melted chocolate.
