35 ladyfingers

Instructions

1.In a large bowl, beat the egg yolks with 1/2 cup of sugar until pale yellow.

3.In a separate bowl, beat the egg whites until they form stiff peaks, then fold them into the lemon mixture.
4.In a shallow dish, mix together the limoncello and simple syrup.
5.Dip the ladyfingers into the limoncello mixture, then arrange them in a single layer in the bottom of a large casserole dish.
6.Spread half of the lemon mixture on top of the ladyfingers, then repeat with another layer of limoncello-soaked ladyfingers and the remaining lemon mixture.
7.Cover the casserole dish with plastic wrap and refrigerate for at least 4 hours (or overnight) before serving.
