1/2 vegetable stock cube
5 1/2 ounces mozzarella cheese , torn into pieces
2 large tomatoes , chopped
2 ounces arugula
4 tablespoons olive oil

1 lemon , Juice

Instructions

1.In a large bowl, add the couscous and vegetable stock cube. Heat 10 fl oz of water in a saucepan and pour over the couscous. Close the bowl with cling film and leave for 10 minutes. Fluff with a fork.
2.In another bowl, add pesto, olive oil, and lemon juice. Whisk all the ingredients until well combined.
3.Add the chopped tomatoes, mozzarella, arugula, and the lemony pesto dressing into the fluffed couscous. Mix well.
4.Serve immediately or refrigerate for an hour before serving. Enjoy!
