Ingredients

5 cups broth
1/4 cup butter
3 onions , halved then sliced
2 -4 cloves garlic , chopped
2 -3 lbs squash , seeded , peeled , cut into cubes
1 teaspoon sage
3/4 cup white wine
1/4 cup red wine or 1/4 cup marsala
1 tablespoon balsamic vinegar
1 1/2 cups arborio rice
to taste pepper
to taste parmesan cheese
Risotto is a classic Italian dish, enjoyed all year round, but particularly comforting in winter. The rich, creamy texture mixed with the sweetness of squash and onions makes this dish a joy to eat. Instructions

1.Warm up the broth to simmer in a saucepan
2.Heat butter in a large, straight-sided skillet over medium heat; add onions and garlic and cook stirring now and then until golden brown and softened, 12 to 15 minutes
3.Mix in squash and fry, stirring constantly for 2-3 minutes until the edges are golden. Sprinkle sage and season with salt and black pepper to taste.
4.Add the rice, stirring, until the edges are translucent, about 1-2 minutes
5.Stir in the white wine, red wine or Marsala and balsamic, and increase the heat to high, allowing the wine to bubble away
6.Add 2 cups of hot broth to the skillet, stirring every now and then, until the broth has been absorbed by the rice and the pan is almost dry
7.Continue this process, adding broth when necessary, stirring every now and then, for another 20-25 minutes until the rice has become creamy and tender.
8.Serve risotto topped with parmesan cheese
