Ingredients

3 1/2 cups chicken broth
2 teaspoons vegetable oil
1 cup onion , chopped
2 teaspoons garlic , minced
1 cup arborio rice
180 g prawns , peeled , deveined , diced
75 g goat cheese
2 tablespoons parmesan cheese , grated
1/4 teaspoon black pepper
1/4 teaspoon salt
1/3 cup fresh basil , chopped
1/2 cup white wine ( optional )
This prawn goat cheese risotto is a modern twist on the classic risotto recipe. Arborio rice cooked with chicken broth, goat cheese, and fresh prawns creates a mouth-watering combination of flavors. Instructions

1.Heat the chicken broth in a pot and keep warm over low heat.
2.In a separate pot, heat the vegetable oil over medium heat. Add the onions and garlic and sauté until softened.
3.Add the arborio rice to the pot and stir to combine. Cook until the edges of the rice are translucent.
4.Add 1/2 cup of the warm chicken broth to the pot and stir constantly until it has been absorbed by the rice.
5.Keep adding the chicken broth in 1/2 cup batches, stirring constantly and allowing the liquid to be absorbed between each addition. This should take about 20 minutes.
6.Once the rice is al dente, add the diced prawns and the white wine (optional) to the pot. Cook for 2-3 minutes or until the prawns are fully cooked.
7.Remove from heat and stir in the goat cheese and parmesan cheese until fully melted and combined.
8.Season with salt and black pepper to taste.
9.Garnish with fresh basil before serving.
