Ingredients

3/4 ounce dried porcini mushrooms
1 cup hot water
5 1/2 cups vegetable stock ( or chicken stock )
3 tablespoons butter , divided
2 tablespoons olive oil
2 onions , quartered lengthwise , sliced crosswise
4 ounces baby portabella mushrooms , sliced ( baby bella mushrooms )
3 1/2 ounces shiitake mushrooms , sliced
4 ounces oyster mushrooms , sliced ( or other mushrooms )
2 cups arborio rice ( or medium grain rice )
3/4 cup dry white wine
1 tablespoon fresh sage , finely chopped ( or 1 tsp . dried )
1 1/2 cups parmesan cheese
salt
pepper
fresh sage leaf
Originating from Italy, risotto is a classic comfort food and a staple in many Italian households. This Porcini, Caramelized Onion, and Sage Risotto recipe takes that classic dish and elevates it with the addition of several varieties of mushrooms, caramelized onions, and fresh sage. Arborio rice is the foundation of this dish, and its creamy texture and hearty flavor complement the mushrooms wonderfully. Instructions

1.Soak the dried porcini mushrooms in hot water for 30 minutes. Once soft, drain and chop roughly.
2.Heat the vegetable or chicken stock in a separate pot until it reaches a simmer.
3.In a large saucepan, heat 2 tablespoons of butter and olive oil over medium-high heat.
4.Add the onions and sauté until they start to caramelize and become brown, about 15 minutes.
5.Add all the sliced mushrooms, including the soaked porcini, and cook until soft and browned, around 10 minutes.
6.Bring the heat down to medium, then add the arborio rice, white wine, and chopped fresh sage, stirring constantly for 2 minutes.
7.Once absorbed, ladle in about a cup of the hot stock into the rice mixture, stirring constantly until it is almost fully absorbed.
8.Continue by adding the stock, one cup at a time, and stirring frequently for around 20-25 minutes. The rice should be cooked through and creamy but still have a bite.
9.Remove from heat, then stir in the remaining tablespoon of butter and parmesan cheese. Add salt and pepper to taste and garnish with fresh sage leaves before serving.
