4 cups vegetable stock
1 cup white wine
1 tablespoon oil
1 tablespoon butter
2 leeks , thinly sliced
2 cups arborio rice
1/2 lb button mushroom , sliced
1/2 lb cremini mushroom , sliced thin
2 tablespoons parsley , chopped
1/2 cup parmesan cheese , grated

Instructions

1.In a large pot, heat the vegetable stock and wine over medium heat until hot but not boiling.
2.In a separate large pot, heat the oil and butter over medium heat until melted.
3.Add the leeks to the pot and sauté for 5 minutes or until softened.
4.Add the rice to the pot and stir to coat in the butter and oil mixture.
5.Begin adding the hot stock mixture to the rice mixture, one cup at a time, stirring constantly until each cup is absorbed before adding the next cup.
6.Once all the stock mixture has been added and absorbed, stir in the sliced button and cremini mushrooms.
7.Continue cooking the risotto over medium heat, stirring constantly, until the mushrooms are cooked and the rice is tender, about 10-15 minutes.
8.Remove the pot from the heat and stir in the chopped parsley and grated parmesan cheese.
